I’ve been on a muffin mission lately because… I’m nesting? I’ve never been a big baker because I don’t like all the rules. I always end up effing up because I try tossing in something that doesn’t work. Solution? EGG WHITE MUFFINS!! You can throw in pretty much anything and it’s still delicious. It’s great for left over veggies from the week.
Eggs are a staple in my diet because there is so much you can do with them and they are so low carb. I make a breakfast fritatta like this Chicken sausage frittata on Sunday before the work week starts and then I eat it all week for breakfast. As I talked about in THIS post, breakfast is the hardest meal for me because of the dawn phenomenon. These egg white muffins give me a hearty breakfast, they transport to work well and they will hold up in the freezer if they don’t all end up in your belly on day one.
