Hi! My name is Kait. If I had a drug of choice, it would be sugar. Snort it, shoot it or smoke it (caramel anyone?). I would have taken it any way possible. Although I developed type 1 diabetes (not related to my sugar intake) at the age of 8, I did not effectively control my glucose levels when I was reacting to carb intake using additional insulin. I always felt like I was chasing my tail. I realized that having sweet treats once in a blue moon really maximized my control and made me feel better. I started gradually eating less carbs, less fruit, less refined sugar and lower glycemic index. Not only have my blood sugars improved, but I have less headaches and I sleep better.
Fast forward a few years later and I am now happily married to a sweet, supportive man who not only tolerates my crazy diet but also helps me come up with fun recipes and ideas. The kicker… we just found out we are pregnant! As if it’s not enough pressure with doctors constantly warning you of the potential consequences of imperfect blood sugar numbers, pregnancy makes you responsible for TWO lives and a whole other set of complications. With a strict diet, light exercise and a lot work, I have been able to keep my hemoglobin A1C in the low 5% range throughout my pregnancy. I find new tips and tricks daily on fun substitutes and easy swaps to beat the sweets but I have definitely had my challenges. Managing new hormones, feeling blah and all the other surprises of pregnancy have made this a bumpy and unpredictable road.
Sharing my story to create a community
Throughout this process, I noticed there was a real lack of resources for this lifestyle. Having diabetes (any type) is hard in the first place, but being pregnant as well makes it nearly impossible. Low carb living has made it possible for me to stay happy and healthy throughout this pregnancy and I believe that it can help countless people reach their goals. Through keeping the food fun and interesting, constantly trying new things and always maintaining a sense of humor I think livin’ low carb and having tight glucose control can even be fun! I want to share a few recipes, successes and of course, struggles throughout my journey to show that no matter how addicted you are to sugar, anyone can do this and find success.
